Coco-Choco Baked Oatmeal

Coco-Choco Baked Oatmeal

INGREDIENTS

1 banana
2 eggs
1 ½ cups TruMoo® Chocolate Milk
½ cup maple syrup
¼ cup olive oil
½ cup unsweetened coconut flakes,
plus more to top
2 ½ cups old-fashioned rolled oats
½ teaspoon kosher salt
1 teaspoon vanilla extract
¼ teaspoon nutmeg
2 tablespoons unsweetened cocoa powder
½ cup chopped pecans
Maple syrup to serve

INSTRUCTIONS

Preheat oven to 350°F. Line a 9×9” pan with parchment paper.

In a large bowl, mash banana well with a fork. Add eggs and whisk to combine with banana. Then whisk in chocolate milk, maple syrup, and olive oil.

Add coconut flakes, rolled oats, salt, vanilla, nutmeg, and cocoa powder into bowl and stir until just combined.

Pour oatmeal mixture into prepared pan and top with pecans and extra coconut flakes. Bake on the middle oven rack for about 25 minutes or until the edges are set, the center is still a little bit soft, and the coconut flakes are toasted.

Serve with maple syrup.
